Does anyone know if the DSG box (standard - no DSG map) will kick down in manual mode if the torque is too high?

Too high for what? Kick down will always work unless you have the DSG mapped

So if you've had your engine mapped and its producing way more torque than it did standard, the DSG box will still [try to] save the clutches etc in manual mode

No. It will still kick down to the lowest gear
