Please can you tell me how I add a line out to an RNS 510?

Look at the pin assignment you should see them.  You need Left, Right and Ground.

if I use the pin outs then I'll have to make a cable. Is there not an off the shelf VW to F&R phono's?

Yes you'd need to make a cable, shouldn't be too difficult though.
