Who knows what would be best...I use:
Damp microfiber cloth with water first...let dry.
"Meguiars Natural shine" on composite bits.
"Meguiars Leather cleaner and conditioner", sometimes "Farnum Leather New" on all leather bits.
"Stoner Invisible Glass Cleaner" on glass, mirrors, and dash lenses. (alcohol based and never streaky)
After vacuuming/Hoovering I often use a leaf blower on the interior as well.
I use swiffer dusters a lot!

If I may...any tips on what to use on the cloth seats?

I'm a big fan of Autoglym glass polish

What do people use on the centre dash? The bit that has like a rubbery finish to it ?

good question I'm stuck the same what to use? does any one use auto gym vinyl and rubber cleaner?

Recent I've started using meguiars interior quick detailer. Very good, and gives that original Matt finish, with a very slight fragrance.
Glass, meguiars glass cleaner, I'm quite fond of most stuff they sell.
I find a wee detailer a brush kept in your glove box is always handy for getting into the vents etc

I use a basic foam apholstry cleaner that works a treat taking out water marks and stains from the seats. Then AG Vinyl and rubber care on all the surfaces and their glass cleaner too.

I use:
Dr Leather Liquid Cleaner - Absolutely brilliant product lifts the dirt with ease...
LTT Auto Protect - Not a conditioner but a protectant for the leather...
Chemical Guys Inner Clean - Cleans and protects the dash and other surfaces leaving a pineapple scent but leaves a matt finish...
Autoglym Glass Polish or Fast Glass

+1 for the meguiars glass cleaner, used to use autoglym fast glass but the megs is far superior
