I'm struggling to get much information on this as it's not a very common modification, but I'm really interested in doing it for various reasons. If I'm correct (from what I've seen), you use the stock subframe but replace:
Control Arms (Wishbones)
Hubs (Uprights)
Track Rods + Ends
Optional: Steering Rack (with above)
I have all the part numbers for the TT RS here (the various different assemblies I need):

Just trying to document all the info in one place and get anyone who knows more to point me in the right direction of what needs to be done and where to source parts from. Also, I'll need to work out things like which SuperPro bushes to use throughout (makes sense to do those while the parts are on the work bench).
Current plan is to build up both axles as much as possible off the car and then just swap entire assemblies into the car for ease of fitting, haven't made much attempt as working out parts on the rear axle just yet (one at a time). Any pointers would be amazing.

Did mine around 5 years back. Info should be in my build thread somewhere. Give me a call if you want all the info.
You need the rack, or will need to cut the existing rack for the TT track arms to fit.
All MK2 TT's use the same front end so don't get hung up on using TTRS parts.

Adds around 12mm of extra track at all corners. Puts caster at around 9 degs at the front.
The Mk5 superpro bushes are what you need. Would advise rolling all the arches, and getting wider fronts.
You also ideally need the TT driveshafts.

knew you'd come through for me mate. Might have to give you a bell this week to get an estimate on price of all the parts supplied (if you can get the various parts).
I've already got SRS-Tec front wide arches, hoping to find a way to extend the rear arches (thinking VW Cup rear body extensions) and I'll find a reputable place to roll all my arches as much as possible too.
