So I have this under the armrest.

I also have RNS510.
I don't have an iPod but I do have an iPhone 7. So I bought one of these....

Plugged the cable in, then into the phone... nothing.
Pressed Aux on the RNS still nothing..
What am I doing wrong?

Probably the dock is too old to recognise the new Apple interface on the RNS510. Most likely you need a MDI dock and cable to get the iPhone working as intended like the one shown below.

So would an oldskool iPod classic work?

Like PatchySan said, you need a MDI module with a lightning connector. That Ipod connector is too old and not compatible with RNS-510.
