What size of rear wheel bearing does the mk5 gti require? ECP & VW have 2 sizes listed. 30 and 32 mm?

It varied depending on model year. VW should be able to tell you from your Reg / VIN no.

Called euro car parts and 2 different VW dealers and they all said they don't know..

Buy both then and take back the one you don't use.

What's your VIN number? - The difference since isn't so important.
Best way to check is to see if they have 3 or 4 bolt holes.
Usually easy to check with the VIN number. :)

Well it's that or remove an old one first to get the size, isn't it?

Front can be determined by the number of bolt holes. The holes I refer to are the ones that mount the hub to the strut, not the wheel bolt holes ;)
You should be able to tell which you have by jacking the car up and looking at rear of hub, where you will be able to see the mounting holes.

The number of holes is normally detailed on euro car parts too, so you can choose the right one.
Rear can mostly (but not always) be identified by the casting visible on rear of hub.
