Will a DSG transmission interchange into another car with a different transmission code but same engine code? For instance will a DSG from a 2013 GTI with a 2.0 TSI fit into a 2010 MK5 Jetta with a 2.0 TSI?

It will, providing it has the original mechatronics with it. And may also need coding afterwards.

This is good to hear, yes the transmission is complete with the mech unit. should I change the coding to match what the original mech unit coding is from the 2010?

Should be plug & play to be honest. I would fit and see how it goes, may need some slight adjustment but typically they are spot on by just swapping them out.

this is interesting, do you know anyone that has done a swap like this with miss-matched transmission codes? I've seen several manual to DSG swaps which is similar because there was no DSG transmission code allocated to those cars.
