....Hey! That cinnamon is a good idea :party: Yep, always use butter.
Someone I know who used to be a top chef at Claridges (he's particularly famous for making that huge cake of a Mini car), told me that the test of a good frying pan is how well it does pancakes. Like him, I use a SSK - German of course!

....I ran out of maple syrup so I used Bonne Maman wild blueberry jam which has real cranberries blueberries.

I know. I keep mine in the fridge after opening.
According to what's been posted in this thread it seems you can mix absolutely anything in a pancake and it'll taste good. How about scotch egg and Bonne Maman jam!?

Well spotted - I meant to write "real blueberries".
I also love Tiptree's Cranberry Jelly and their Quince Jelly but I haven't tried either in pancakes.

Well, I was too full to finish off all the pancake mix last night so I had the remainder this morning for breakfast. I didn't like the idea of a very raw mixture of eggs, melted butter, and milk, hanging around for too long, not even in the fridge.
I think to finish off the topic of the thread, I should post a pic of our esteemed pancake inspiring hottie Olivia Wilde - so many to choose from!:

I put just a small amount of soya sauce on quite a lot of things - Locally caught (yesterday) Gurnard fish fillets tonight :party: Steamed in the oven and currently marinating in lime juice, soya, black pepper, and dill.
Soya does a lot for chicken too which can be a bit bland when cooked simply.

Depends if I'm making traditional thin ones or the big arse american type ones. If its traditional its gotta be really finely diced and that goes straight in to the batter before it touches the pan. For the thick ones I just sprinkle it in once the batter is in the pan.
