Im looking at a sub and amp to fit into the enclosure from the GB. Iv found a sub that has 350w nominal power output (its a duel 2ohm coil) with a peak of 1200w. The amp im looking at is 1x400w rms at 2ohms with a peak at 800w. Will it run ok?

What are the products you're looking at?
You won't get 4ohm load out of a dual 2ohm sub.
You'll need a 2ohm or 1ohm stable amp for that sub.

That's a dual 4ohm sub - wire them in parallel to give a 2 ohm load.
That will then give 400wrms onto the 350rms sub. I wouldn't say no to that.
Sub looks good. Not personally a fan of JVC but don't think they have a bad name. :happy2:
