I've just fitted my fk coilovers on my ed30, I need to go get the wheels aligned. What's the best fast road setup so I can tell them how I want it setup. I have got the coilovers on the lowest setting

Step 1 - DO NOT drop it as far down as its lowest setting. Your suspension will have nowhere to go!
It might be best to get it aligned somewhere where they really know how to setup a suspension and then listen to their advice.

How much would you bring it up by

mine is lowered so the wheel arch followers the top of the wheel and doesn't have any trouble with speed bumps

Are you trying to say that fk ones are no good?

....I'm not familiar with the FK coilovers.
Take the advice of professional guys like vRSAlex and PDT.

The ride height isn't the important factor when setting up a car for good fast road performance, it's about an overall balance of lots of factors, spring rates, damping, camber/castor, toe settings etc...
FK stuff is all about cheap and low, never driven a car with FK that I liked. But have driven lots of cars with H&R, Bilstein, BC, that felt great right out of the box.
Lots of forum members have and like AP (which I dislike on this chassis platform) which tells me that suspension is a personal thing, like most products there is always better out there, but until you try out every kit on the market you won't know which you prefer, so fit the FK, get them set up properly and if you like them that's great.
My personal choice on the MK5 platform is the Bilstein B12 kit, very much fit and forget and is a great all rounder.
