right guys! i'm after new rubber for my wheels, they're 18" by 8.5 wide, i want some stretch on them OR a nice low profile... can both be achieved? And thus far i'm torn between; Continental, Pirelli, Michelin and TOYO. i don't know very much about tyres, i've read through on the search section and it seems that almost every application requires a different set up! currently i'm on H&R coil-overs as well. help would be really appreciated

If you want to protect the wheels, try and find 95Y rated sizes. The more you stretch them the lower that weight rating goes down. My 225/40-18's slightly stretch on 8" wheels. I personally would go for more footprint and go up to 235/40, 235/35 or 245/35 with 95Y rates:
