How could I fit a sub to my mk5 golf I have a rcd510 one of these

Is there any way of using the existing amp if you have the soundpack fitted? Or can you fit one in its place to do the whole system?

line out converter as in it uses the rear speakers?

I had to use Line Out Converters on my RNS510.

Actually used the feed for the Front Speakers, as I believe the Rears are filtered.

Sounds awesome if you set it up Properly .
