I am looking into getting myself some uprated anti-roll bars. I want H&R ideally, but I am open to suggestions. I am wondering whether I can just grab the rear one by itself, or should I really be upgrading both of them?

Lots of people on here have done just the rear bar. Alex at Aks is running a group buy on the H&R bars. Many have also gone for Eibachs 23mm at the rear.

My preference was to fit a matched pair. I have an Eibach f+r kit, no issues and works well on road and track.
I think many have done just the rear and I dare say there's preferred choice when retaining the front OE part so as to maintain good dynamics.

I've thought about this myself has it made much difference?

Where is the actual group buy located, on this forum?
