Where's the cheapest place for Cambelt and water pump for a GTI?
Any guides online to fitting these items and how hard/easy is it?
Any ideas what VW charge usually for Cambelt/water pump service?

I paid £370 at AKS tuning in Bedford, genuine parts.

Your location would help out...
As for difficulty: quite difficult. You need to know what you're doing as getting it wrong results in the engine timing being misaligned which can lead (worst case) to internal damage requiring at least a top end engine rebuild.
I think VW main dealer charge around £500 for this service.

Apologies. I'm from Edinburgh. Sadly all the companies that have a good rep on the forum are ages away!

Although not the cheapest mine was £419 from Martins VW back in 2011, should be an indicator of what's cheap and what isn't.
