What's better for sound/performance which one will I get more gains with ?

3" provides better air flow so should result in better performance and potentially a few pops and bangs!

What power level are you at?

You should be aiming at a 2.75" system at least on K03 and 3" with a K04, 3.5" down pipe on anything over a K04. 600bhp and you will need a 4" system.

3" won't pop and bang if there is a cat present.
