I'm happy with the TB spacer, so unless you already already have a charge pipe from Revo, CTS etc. I'd get one from AKS (do not buy the cheaper Creation motorsport imitation as it's sh*t)
For the boost pressure feed, I have a manifold blank from a PCV delete kit ( I run a full vent to atmosphere setup very similar to the R-Tech kit). It blanks the side of the inlet manifold but comes with either a nipple or blank to give a boost feed. The AKS spacer is around 85 quid and the inlet manifold blank around 40.
Progressive just allows you to run something like 35% flow at x psi, which then switches to 100% at y psi, both boost pressures adjustable on the controller. But this will involve extra wiring and installing inside the car.
Run a proper 50:50 mix with pure methanol and deionised water. You can still use it to clean the windscreen if need be as it does the job (a lot of screenwash fluid contains methanol). If you can't find a local supplier then methanol can be bought for 30-40 quid for 25 litres on eBay delivered. Deionised water is widely available but cheapest I've found is delivered by eurocarparts.com. 25 litres of each lasts me over 12 months

I did read that with these systems there is some potential danger if you hit the rev limiter as the fuel gets cut by the ecu but the water doesn't, hence a really lean mixture and potential damage. Seems some more expensive systems monitor fuel (via an injector) and cut the water if the fuel is cut ?

It depends on how the ecu works and is set up. The standard soft limiter pulls back as you approach it rather than be a violent cut of the fuel and/or spark so you would never be in that situation.
To be honest I've not even heard of a system that advanced, nor heard of anyone using it so it's not something good I would worry about
