Now these passenger had that listed as their connecting flight - so is there grounds for compensation since this caused an all paid for over night stay in Dubai?

I can't see this ruling being relevant to your case as your flight wasn't delayed or cancelled. As far as I am aware if you miss your flight due to issues such as those that you mentioned then the only obligation is to get you on the next available flight at no extra cost to yourself, which they seem to have done.

It's going to be handy for our holiday at the end of the year :)

Isn't it mad though that soon you will be able to claim more for a delayed flight than a genuine injury caused by someone else's negligence on the road? Too many fraudsters and claims farmers means the rights of the public in this regard will soon be taken away. See the below tariff schedule for injuries from RTA's due to come in on 1st October 2018 -
Injury Duration New tariff amounts
0–3 months £225
4–6 months £450
7–9 months £765
10–12 months £1,190
13–15 months £1,820
16–18 months £2,660
19–24 months £3,725
